Hide glue has been used for musical instruments for centuries. It is the perfect glue for the task - it dries to a crystalline state and does not dampen or absorb string energy, and joints can be easily taken apart with warm water, heat, and some use vinegar. However, working with hide glue is not that simple. Mixing and heating the glue is an art of itself, and it dries so fast you must perform the join very quickly.
This is the reason big brands have moved away from hide glue and started using modern woodworking glues. Many say this change doesn't really make a difference, and perhaps they're right. But this is one small change, and there's another small change, add yet another small change towards efficiency and cost-effectiveness... Add them all together and what you get is a major difference.
